We strongly believe in what we are doing, in the tradition, in the passion, in the art of creating by hand. We personally follow all the production process, making sure that the final product is always of the highest quality.
It is for this reason that we have preserved the tradition of Direct Flame Wood Roasting, a method which today is in disuse with the arrival of new technologies (electricity and gas).
Technicaly there is a substantial difference between these two production methods and this can be seen in the end result.
The selection of the woods used to roast is an key element in the creation of our coffee. We use only natural Oak Wood (harvested in a sustainable manner) to roast with.
The choice of the Wood, the maturity of the Wood, how dry it is, are some of the factors that the Master Roaster takes into account to ensure that the Wood will release the right aroma in the coffee.
This Direct Flame process is a more labour intensive method resulting in higher production costs, however this undoubtedly allows us to have a product of excellent quality.
More modern technologies like electricy, gas or wood roasting substitute the traditional artisan intervention with machinery and technology, resulting in significantly reducing the roasting times by more than half.

No.1 Fact: MiKoffee is Direct Flame Roasted
We are probably the only coffee manufacturer still roasting using direct flame using natural Italian oak wood. Direct flame roasting is better than other types of roasting, but has long been discarded because it is harder, more difficult to get right and cannot be mass produced. It is because of these reasons that we choose to keep roasting in this manner, whilst all others switched to other methods. This process is different from wood roasting where the drum is heated from outside to roast the coffee. In wood roasting the actual flame does not touch the coffee beans as it does in direct flame roasting.
No.2 Fact: MiKoffee has a unique flavour
Since MiKoffee is direct flame roasted (using natural Italian oak wood) the roasted coffee acquires a unique taste, that also combines the subtle taste of the burning oak.
No other roasting can do this. This is because the direct flame roasting process is different from other methods of roasting (including wood rosting) where the drum is heated from outside to roast the coffee. In direct flame roasting it is the actual flame coming directly from the stove that roasts the coffee.
No.3 Fact: MiKoffee is made in Tuscany
We have been producing quality coffee for 65 years in Montecatini, a town close to Pisa, Chianti & Florence. Since 1952 MiKoffee has been made in Tuscany, the land of art and masterpieces.
The knowledge of how to roast has been transmitted over the years from one Italian Master Roaster to another using the only remaining direct flame Vittoria to roast the coffee. Today thos knowledge is being shared from Lauro to Sara, the next generation of Italian Master Roasters.
No.4 Fact: MiKoffee is limited production
MiKoffee is not a volume or industrial coffee. Our production is limited and there are no more direct flame Vittoria machines around as the factory closed down years ago.
Furthermore direct flame roasting is a slower process than traditional roasting and our barrel can only take a limited amount of beaans in every roast. Thus there is a limit to how much coffee we can roast unlike other roasters.
This though is what makes us truly artisan and special. You can taste all of this when drinking a cup of MiKoffee.
No.5 Fact: MiKoffee is cleaner
Mikoffee is roasted using the direct flame roasting process. This process not only make the product taste better.
Since the flames are shot in the roasting drum, touching the beans and roasting them, there needs to be another outlet that pulls out the air to create a flow. Along with the super hot air a number of residue waste is blown out. This is extra debris that would be on the beans.
All this is debris is removed from our product. It is why, when you open a packet of MiKoffee and touch the beans, they will not leave any brown residue on your hands. Little things that make a difference.
